Why not have a mexican themed feast paired with some of your favorite Claiborne &amp; Churchill wines?<\/p>\n<h1>Cinco de Mayo Starter:<\/h1>\n<p>Mango Salsa paired with our <a href=\"https:\/\/www.claibornechurchill.com\/wines\/white-wines.php?product=321\">2014 Estate Dry Riesling<\/a><\/p>\n<p><a href=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4820.jpg\"><img loading=\"lazy\" class=\"aligncenter wp-image-881 size-medium\" src=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4820-270x300.jpg\" alt=\"Cinco de Mayo: Mango Salsa paired with Claiborne &amp; Churchill 2014 Estate Dry Riesling\" width=\"270\" height=\"300\" srcset=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4820-270x300.jpg 270w, https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4820.jpg 750w\" sizes=\"(max-width: 270px) 100vw, 270px\" \/><\/a><\/p>\n<p>Ingredients:<\/p>\n<p>1 ripe mango, peeled, pitted, and finely diced (about 1 1\/2 cup)<br \/>\n2 Tbsp finely chopped red onion<br \/>\n1\/2 Jalape\u00f1o chile, minced (less or more to taste, make sure to actually taste the chile first, some of them can be quite hot!)<br \/>\n3 Tbsp fresh cilantro leaves, chopped<br \/>\n3 Tbsp fresh lime juice<\/p>\n<p>Directions:<\/p>\n<p>1.Put the diced mango, red onion, jalape\u00f1o and cilantro in a medium bowl. Toss with lime juice. Enjoy!<\/p>\n<h1>A spicy side dish for your Cinco de Mayo Fiesta:<\/h1>\n<p>Stuffed Jalape\u00f1os paired with our <a href=\"https:\/\/www.claibornechurchill.com\/wines\/white-wines.php?product=325\">2016 Dry Gewurztraminer<\/a><\/p>\n<p><a href=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4819.jpg\"><img loading=\"lazy\" class=\"aligncenter wp-image-882 size-medium\" src=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4819-300x300.jpg\" alt=\"Cinco de Mayo: Stuffed Jalape\u00f1os paired with Claiborne &amp; Churchill 2016 Dry Gewurztraminer\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4819-300x300.jpg 300w, https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4819-150x150.jpg 150w, https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4819.jpg 750w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Ingredients<\/p>\n<p>6 slices bacon<br \/>\n12 jalape\u00f1o chiles, halved lengthwise with stems left intact, seeds and ribs removed<br \/>\nSalt<br \/>\n4 ounces mild cheddar cheese, shredded (1 cup)<br \/>\n4 ounces Monterey Jack cheese, shredded (1 cup)<br \/>\n4 ounces cream cheese, softened<br \/>\n3 tablespoons minced fresh cilantro<br \/>\n2 tablespoons panko bread crumbs<br \/>\n1 large egg yolk<br \/>\n2 teaspoons lime juice<br \/>\n1 teaspoon ground cumin<br \/>\nDirections<\/p>\n<p>1. Place oven rack in upper-middle position and heat oven to 500 degrees.<br \/>\n2. Cook bacon in 12\u2011inch nonstick skillet over medium heat until crisp, 7 to 9 minutes. Transfer bacon to paper towel\u2013lined plate. When bacon is cool enough to handle, chop fine and set aside.<br \/>\n3. Season jalape\u00f1os with salt and place cut side down on baking sheet. Bake until just beginning to soften, about 5 minutes.<br \/>\n4. Remove jalape\u00f1os from oven and reduce oven temperature to 450 degrees. When cool enough to handle, flip jalape\u00f1os with their cut side up.<br \/>\n5. Mix cheddar, Monterey Jack, cream cheese, cilantro, panko, egg yolk, lime juice, cumin, and bacon together in bowl until thoroughly combined.<br \/>\n6. Divide cheese mixture among jalape\u00f1os, pressing into cavities.<br \/>\n7. Bake jalape\u00f1os until tender and filling is lightly browned, 9 to 14 minutes. Let cool for 5 minutes. Serves 6-8.<\/p>\n<h1>Cinco de Mayo Main Course:<\/h1>\n<p>Carnitas paired with our <a href=\"https:\/\/www.claibornechurchill.com\/wines\/red-wines.php?product=329\">2015 Twin Creeks Estate Pinot Noir<\/a><\/p>\n<p><a href=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4818.jpg\"><img loading=\"lazy\" class=\"aligncenter wp-image-883 size-medium\" src=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4818-300x202.jpg\" alt=\"Cinco de Mayo: Carnitas paired with Claiborne &amp; Churchill 2015 Estate Twin Creeks Pinot Noir\" width=\"300\" height=\"202\" srcset=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4818-300x202.jpg 300w, https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2017\/04\/IMG_4818.jpg 711w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>For Pork Carnitas<\/p>\n<p>2 1\/2 lbs pork shoulder<br \/>\n1 tbsp lime juice<br \/>\n2 tsp coarse sea salt<br \/>\n2 tsp ground cumin<br \/>\n1 tsp chili powder<br \/>\n1 tsp garlic powder<br \/>\n1 tsp oregano<br \/>\n1 tsp onion powder<br \/>\n1\/2 tsp ground black pepper<\/p>\n<p>For Tacos &amp; Toppings:<\/p>\n<p>corn tortillas<br \/>\nslices of avocado<br \/>\ncilantro, roughly chopped<br \/>\nred onion, diced<br \/>\nslices of lime<br \/>\nDirections<\/p>\n<p>Cut pork shoulder into large 3-4 inch chunks, removing any excess fat.<\/p>\n<p>Place pork in slow cooker.<br \/>\nCombine all other ingredients in slow cooker.<br \/>\nStir to mix thoroughly.<br \/>\nCover and cook on high for 4 hours or until very tender.<br \/>\nWhen tender, pull apart with a fork.<br \/>\nServe on warm corn tortillas and top with onions, cilantro, avocado slices and lime juice!<\/p>\n<p>Cheers!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Feel like throwing a Cinco de Mayo Party this year?
