It was created by Don Reynolds who is a retired chef and former Claiborne and Churchill employee. This dish is quick and easy to make, and most importantly pairs perfectly with any of our white wines. Make sure to grab a bottle from our tasting room or <a href=\"https:\/\/www.claibornechurchill.com\/wines\/white-wines.php\">here<\/a> at our website.<\/p>\n<h2><a href=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2016\/05\/113335_640x428.jpg\"><img loading=\"lazy\" class=\"aligncenter wp-image-625 size-full\" src=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2016\/05\/113335_640x428.jpg\" alt=\"tilapia vera cruz, claiborne and churchill, recipes\" width=\"642\" height=\"428\" srcset=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2016\/05\/113335_640x428.jpg 642w, https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2016\/05\/113335_640x428-300x200.jpg 300w\" sizes=\"(max-width: 642px) 100vw, 642px\" \/><\/a><\/h2>\n<h2>Tilapia Vera Cruz Recipe:<\/h2>\n<p><strong>PREP TIME:<\/strong>\u00a015 minutes\u00a0<strong><br \/>\n<strong>COOK TIME:<\/strong><\/strong>\u00a015 \u2013 20 minutes\u00a0<strong><br \/>\n<strong>SERVINGS:<\/strong><\/strong>\u00a04 \u2013 6\u00a0\u00a0depending on appetite<\/p>\n<h2><strong>INGREDIENTS<\/strong><\/h2>\n<p>5 tablespoons olive oil &#8211; 3 tbsp for the sauce and 2 tbsp for the fish<br \/>\n4 cloves garlic &#8211; minced<br \/>\n1 small onion &#8211; chopped<br \/>\n\u00bc cup drained capers<br \/>\n1 cup sliced green and black olives &#8211; combination dependent upon preference<br \/>\n\u00bd tablespoon jalapeno\u00a0&#8211; minced<br \/>\n3 cups diced fresh tomatoes<br \/>\n\u00bd teaspoon cumin<br \/>\nSalt and pepper to taste<br \/>\n1 lime &#8211; cut into 6 wedges<br \/>\nFresh\u00a0cilantro for garnish<br \/>\n6 tilapia fillets\u00a0&#8211; 6 oz. size<\/p>\n<p>*You can substitute another fish such as red snapper, orange roughy, grouper or cod*<\/p>\n<h2><strong>DIRECTIONS<\/strong><\/h2>\n<p>In a large skillet heat 3 tablespoons of olive oil over medium-high heat.\u00a0 Add the garlic, onion, capers, olives and jalapeno.\u00a0 Saut\u00e9 until soft for 1-2 minutes.\u00a0 Add the tomatoes, cumin, salt and pepper and simmer for 10-15 minutes.<\/p>\n<p>Pat dry each tilapia fillet and flavor with salt and pepper.\u00a0 In another large skillet heat the remaining 2 tablespoons of olive oil and gently swirl to coat the pan.\u00a0 Gently place fish into the oil and sear for 2-3 minutes on each side until golden and flakes easily.\u00a0 Place cooked fish on a serving plate and spoon the sauce from the pan over the fish.\u00a0 Squeeze a wedge of lime juice over the top and garnish with a sprig of cilantro.\u00a0 Serve with Spanish rice and Cuban beans.<\/p>\n<h2>PAIR WITH ONE OF OUR WHITES\u00a0AND ENJOY!<\/h2>\n","protected":false},"excerpt":{"rendered":"<p>As the summer approaches, we wanted to share this delicious Tilapia Vera Cruz recipe with you!
