You can\u2019t go wrong with goat cheese and Pinot,\u00a0but this pairing of Claiborne &amp; Churchill <a href=\"https:\/\/www.claibornechurchill.com\/wines\/red-wines.php?product=305\" target=\"_blank\">Runestone Pinot Noir<\/a> and elegant Selles\u00a0Sur Cher, a soft, french goat\u2019s milk cheese dusted in black vegetable ash, really\u00a0shocked us, and in a good way. Like the Runestone Pinot, this cheese has a\u00a0long, fascinating finish that develops in the mouth over time.<\/p>\n<p><strong>The Mold and the Beautiful<\/strong><\/p>\n<p>The use of ash in cheesemaking is a technique that\u2019s hundreds of years old.\u00a0Originally meant to preserve the surface of young cheeses, it is now known that\u00a0the use of ash helps in the development of beautiful, distinct surface molds, like\u00a0those that you will find in this Selles Sur Cher goat cheese.<\/p>\n<p><a href=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2016\/01\/BeenleighBlue-1322591034.jpg\" rel=\"attachment wp-att-507\"><img loading=\"lazy\" class=\"aligncenter wp-image-507 size-medium\" src=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2016\/01\/BeenleighBlue-1322591034-300x200.jpg\" alt=\"Cheese Plate (Cheese #5): Beenleigh Blue with the Claiborne &amp; Churchill Syrah\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2016\/01\/BeenleighBlue-1322591034-300x200.jpg 300w, https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2016\/01\/BeenleighBlue-1322591034-768x511.jpg 768w, https:\/\/www.claibornechurchill.com\/blog\/wp-content\/uploads\/2016\/01\/BeenleighBlue-1322591034-1024x681.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h2>5. 2013 Syrah with Beenleigh Blue<\/h2>\n<p>Nothing pairs better with a bold, spicy red wine than blue cheese, and this pairing\u00a0is no exception! Beenleigh Blue is a pasteurized sheep cheese made with\u00a0vegetable rennet. It comes from Sharpham Barton, in South Devon\u00a0(Southwestern England). The remarkably mild, elegant blue-veined cheese has\u00a0unique, sweet aromas of nectar and honeysuckle, and its semi-soft, fudgy, flaky\u00a0texture reminds us a bit of coconut. Only a few bottles left of this delicious <a href=\"https:\/\/www.claibornechurchill.com\/wines\/red-wines.php?product=301\" target=\"_blank\">Syrah<\/a>!<\/p>\n<p><strong>All About Ewe<\/strong><\/p>\n<p>According to one of Beenleigh\u2019s distributors &#8211; Neal\u2019s Dairy Yard, in the UK &#8211; the\u00a0milk for this English cheese comes from a flock of 250 ewes who graze on grass\u00a0and clovers in the summer.
