If you haven\u2019t met them, Sophie and Paul Boban-Doering are the owners of\u00a0Fromagerie Sophie<\/a>, a cheese shop in downtown San Luis Obispo that has\u00a0quickly proven itself to be one of SLO\u2019s most treasured and unique gems. When\u00a0Sophie and Paul opened Fromagerie Sophie, the cheese game in SLO was\u00a0immediately elevated, and no one is more appreciative of that then those in the\u00a0local wine industry.<\/p>\n

Here at Claiborne & Churchill, we finally have the opportunity to offer our guests\u00a0a fantastic new tasting experience: a flight of five wine-paired cheeses from\u00a0Fromagerie Sophie! Each pairing was painstakingly and lovingly selected, and\u00a0the cheese plates are offered daily in our tasting room. Recently, our tasting staff\u00a0had the pleasure of receiving an educational cheese tasting with Paul, and we\u00a0couldn\u2019t be more excited to talk about these cheeses with you and share some of\u00a0the stories that he passed along to us! Each day this week, we\u2019ll be telling stories about a different cheese\u00a0from our cheese flight.<\/p>\n

\"Cheese<\/a><\/p>\n

1. 2014 Dry Gew\u00fcrztraminer with L\u2019Muse Signature Gouda<\/strong><\/h2>\n

Our well loved Gew\u00fcrztraminer<\/a>, with its bright, spicy aromas and notes of lychee,\u00a0is the perfect pairing for this caramely, aged gouda from Beemster, Holland.\u00a0L\u2019Muse Signature Gouda is aged for two years, and is deep amber in color with\u00a0well-distributed protein crystals. Creamy with slightly salty, nutty notes, this\u00a0cheese has a deep, complex, and long finish that sets off the bright acidity, spice,\u00a0and tropical fruit of our Gew\u00fcrztraminer!<\/p>\n

What<\/strong>\u2019<\/strong>s that crunch? <\/strong><\/p>\n

You\u2019ll notice this cheese has some tiny, crunchy crystals in it, giving it a remarkable texture. The crystals found in exquisite aged goudas, cheddars, and grana padanos are not \u201csalt crystals\u201d as some suspect. Rather, they come from tyrosine, an amino acid found in cow\u2019s milk protein. When, during the aging process, the amino acid chains break down, tyrosine is released into the cheese, forming those amazing little crunchies!<\/p>\n
