Although we always refer to this as "Sparkling Wine," rather than "Champagne," you may wish to know that ours is made completely in accordance with the traditional Methode Champenoise, whereby each bottle of our own wine is refermented, aged en tirage, riddled, disgorged, dosaged, and corked, with the help of a winery equipped to do so (and the owner's French, for heaven's sake!).
